No-Bake Chocolate Date Energy Balls


These energy balls make for a great snack or a quick pick-me-up during the day. They are packed with natural sweetness from the dates, the protein and fiber from the chickpeas, and the rich chocolate flavor from the cocoa.


Ingredients

  • 2 deciliter pitted dates

  • 2 deciliter cooked chickpeas (drained and rinsed)

  • 1/2 deciliter cocoa powder

  • 2 tablespoons maple syrup

  • 1/2 teaspoon vanilla extract

  • shredded coconut (optional, for coating)


Instructions

  1. In a food processor, combine the pitted dates, chickpeas, cocoa powder, maple syrup, and vanilla extract. Process until the mixture becomes smooth and well combined. You may need to scrape down the sides of the food processor a few times to ensure everything is evenly mixed.

  2. Once the mixture is smooth, remove it from the food processor and transfer it to a bowl. It should have a sticky consistency.

  3. Take small portions of the mixture and roll it between your hands to form small balls, about the size of a golf ball. Repeat until you've used up all the mixture.

  4. If desired, roll the energy balls in shredded coconut to coat them. This step is optional but adds a nice texture and flavor.

  5. Place the energy balls on a baking sheet or plate lined with parchment paper. Let them sit in the refrigerator for about 30 minutes to firm up.

  6. Once chilled and firm, your No-Bake Chocolate Date Energy Balls are ready to be enjoyed! Store them in an airtight container in the refrigerator for up to one week.
